No-Bake Peanut Butter Energy Balls

Ingredients
  

1 cup rolled oats

1/2 cup creamy peanut butter (or any nut/seed butter)

1/3 cup honey or maple syrup

1/2 cup ground flaxseed

1/2 cup dark chocolate chips (optional but recommended!)

1 tsp vanilla extract

A pinch of salt

Shredded coconut (optional, for coating)

Instructions
 

In a large mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of salt. Stir until well mixed.

    In a separate bowl, mix together the creamy peanut butter, honey (or maple syrup), and vanilla extract until smooth and combined.

      Pour the peanut butter mixture into the dry ingredients and stir until everything is fully combined. The mixture will be thick; you may want to use your hands or a sturdy spatula to ensure an even texture.

        If you’re adding chocolate chips, fold them into the mixture at this point.

          Once the mixture is combined, take about a tablespoon of the mixture and roll it into balls (about 1 inch in diameter). Wipe your hands with water or coconut oil if the mixture sticks too much.

            (Optional) Roll the energy balls in shredded coconut before placing them on a baking sheet lined with parchment paper.

              Once all the balls are formed, refrigerate them for at least 30 minutes to firm up. Then, they’re ready to enjoy!

                Store any leftovers in an airtight container in the fridge for up to one week, or freeze for longer storage.
