8 oz (225g) cream cheese, softened

1/2 cup (60g) powdered sugar

1 teaspoon vanilla extract

1 cup (240ml) heavy whipping cream

1/2 cup (120g) sour cream

Zest of 1 lemon

For the Strawberry Topping:

2 cups (300g) fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 tablespoon lemon juice

For the Crust:

1 cup (100g) crushed graham crackers or digestive biscuits

4 tablespoons (60g) unsalted butter, melted

2 tablespoons (30g) granulated sugar

Instructions
 

Prepare the Crust:

    - In a mixing bowl, combine the crushed graham crackers, melted butter, and 2 tablespoons of granulated sugar. Mix until the crumbs are well coated.

      - Spoon the mixture into the bottom of serving cups or jars (about 1-2 tablespoons each) and press down firmly to create an even base. Set aside.

        Make the Strawberry Topping:

          - In another bowl, combine the sliced strawberries, 2 tablespoons of granulated sugar, and lemon juice. Gently toss to coat the strawberries and allow them to macerate for about 15 minutes. This will enhance their sweetness and flavor.

            Prepare the Cheesecake Filling:

              - In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and continue mixing until well combined.

                - Add the vanilla extract, sour cream, and lemon zest. Mix well until smooth.

                  - In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture in three parts, making sure to maintain the light, airy texture.
