Ingredients

8 oz (about 225g) of spaghetti or your favorite pasta (uncooked)

4 ripe heirloom tomatoes, diced

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1/2 tsp sea salt, or to taste

1/4 tsp freshly cracked black pepper

1/4 tsp red pepper flakes (optional for heat)

1/2 cup fresh basil leaves, roughly torn

1/4 cup grated Parmesan cheese (optional)

Zest of 1 lemon

Instructions

Prepare the Pasta: Start by cooking the pasta according to the package instructions. Once cooked al dente, drain it and rinse under cold water to stop the cooking process. Allow it to cool while you prepare the tomato mixture.

Make the Tomato Mixture: In a large mixing bowl, combine the diced heirloom tomatoes and halved cherry tomatoes. Add the minced garlic, olive oil, sea salt, black pepper, and red pepper flakes (if using). Mix well to combine. This mixture will serve as the fresh, flavorful sauce for your pasta.

Combine Pasta and Sauce: Once the pasta has cooled, add it to the tomato mixture. Use tongs or a large spoon to toss everything together gently until the pasta is well-coated in the delicious tomato and olive oil mixture.

Add Fresh Ingredients: Gently fold in the torn basil leaves and lemon zest. These will add freshness and brightness to your dish.

Serve: If you like, sprinkle grated Parmesan cheese over the top before serving for an extra layer of flavor. Serve immediately at room temperature or chill it briefly in the refrigerator for a refreshing no-cook meal.

Enjoy: This dish is perfect for a quick lunch or a light dinner, showcasing vibrant flavors and requiring no cooking beyond the pasta!
