Nutritious Chicken and Green Bean Stir-Fry

2 cups fresh green beans, trimmed

1 lb boneless, skinless chicken breast, thinly sliced

2 tablespoons vegetable oil (or sesame oil for added flavor)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 small red bell pepper, sliced

1 small onion, thinly sliced

3 tablespoons low-sodium soy sauce

1 tablespoon oyster sauce (optional for depth of flavor)

1 tablespoon rice vinegar

1 teaspoon corn starch mixed with 2 tablespoons of water (for thickening sauce)

Salt and pepper to taste

Sesame seeds, for garnish

Cooked brown rice or quinoa, for serving

Instructions
 

Prepare the Ingredients: Start by washing and trimming the green beans. Slice the chicken breast into thin strips and season lightly with salt and pepper. Mince the garlic and grate the ginger.

    Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. When hot, add the sliced chicken. Stir-fry for about 4-5 minutes until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add another tablespoon of oil. Toss in the minced garlic and grated ginger, sauté for about 30 seconds until fragrant. Add the sliced onion and bell pepper, cooking for another 2-3 minutes until the vegetables are slightly softened.

        Add Green Beans: Stir in the trimmed green beans and cook for an additional 5 minutes, stirring occasionally, until they become tender but still retain a nice crunch.

          Combine and Sauce It Up: Return the cooked chicken to the skillet. In a small bowl, whisk together the soy sauce, oyster sauce (if using), and rice vinegar. Pour this mixture over the chicken and vegetables, making sure everything is well-coated.

            Thicken the Sauce: Stir in the corn starch mixture, cooking for another 2 minutes until the sauce thickens slightly. Taste and adjust the seasoning with salt and pepper as needed.

              Serve: Remove from heat and garnish with sesame seeds. Serve the stir-fry over a bed of cooked brown rice or quinoa for a complete meal.
