1 cup milk (or plant-based alternative)

1/2 cup brown sugar

1/4 cup honey or maple syrup

1/2 cup applesauce (unsweetened)

1/4 cup vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

1 cup all-purpose flour (or whole wheat flour)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup mix-ins (chocolate chips, nuts, or dried fruits)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper cupcake liners or lightly grease them with cooking spray.

    Prepare Oats: In a medium bowl, combine the rolled oats and milk. Let it sit for about 15 minutes to allow the oats to absorb the liquid and soften.

      Mix Wet Ingredients: In another large bowl, whisk together the brown sugar, honey (or maple syrup), applesauce, vegetable oil, and vanilla extract until well combined.

        Combine Ingredients: Stir the soaked oats into the wet ingredients mixture. Mix well until fully combined.

          Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
