Ingredients

1 medium butternut squash, peeled, seeds removed, and cut into 1-inch cubes

2 large apples (like Granny Smith or Honeycrisp), cored and sliced

1 medium red onion, thinly sliced

3 cloves garlic, minced

2 tbsp olive oil

1 tsp ground cinnamon

1/2 tsp nutmeg

1 tbsp maple syrup (optional, for sweetness)

Salt and pepper, to taste

1/4 cup dried cranberries (for garnish, optional)

1/4 cup pecans or walnuts, chopped (for garnish, optional)

Fresh thyme or rosemary, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

Prepare the Vegetables and Fruit: In a large mixing bowl, combine the butternut squash, apple slices, and red onion. Add the minced garlic and toss everything together.

Season the Mixture: Drizzle the olive oil over the mixture. Sprinkle with cinnamon, nutmeg, salt, and pepper. If you like a hint of sweetness, add the maple syrup. Toss until all the pieces are evenly coated with oil and spices.

Transfer to Baking Dish: Spread the seasoned butternut squash and apple mixture into a single layer on a large baking sheet or an oven-safe pan. Make sure not to overcrowd the pan for even roasting.

Bake: Place the pan in the preheated oven and bake for about 25-30 minutes, or until the butternut squash and apples are tender and slightly caramelized. You may want to stir the mixture halfway through to ensure even cooking.

Garnish and Serve: Once baked, remove from the oven and sprinkle with dried cranberries and chopped nuts if using. For an aromatic touch, add some fresh thyme or rosemary leaves. Serve warm as a delicious side dish or a healthy main course.
