One-Pot Cajun Chicken Alfredo

1 lb (450g) boneless, skinless chicken breasts, diced

2 tablespoons Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

8 oz (225g) fettuccine or pasta of choice

1 cup (150g) cherry tomatoes, halved

1 cup (150g) fresh spinach

Salt and pepper to taste

Chopped fresh parsley for garnish

Instructions
 

Season the Chicken: In a bowl, toss the diced chicken with Cajun seasoning, ensuring it's evenly coated.

    Sauté the Chicken: In a large, deep skillet or pot, heat the olive oil over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken and set aside.

      Cook Garlic: In the same skillet, reduce heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.

        Add Broth and Cream: Pour in the chicken broth and heavy cream, scraping any brown bits from the bottom of the pan. Stir well to combine.

          Incorporate Pasta: Add the uncooked fettuccine directly into the skillet. Make sure it’s submerged in the liquid. Bring it to a gentle boil, then reduce to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

            Mix in Cheese & Veggies: Once the pasta is cooked, add the grated Parmesan cheese, cherry tomatoes, and spinach. Stir until the cheese melts and the spinach wilts, creating a creamy sauce. If needed, add a splash more chicken broth to loosen the sauce.

              Return Chicken: Add the cooked chicken back into the skillet. Mix everything together and let it heat for another minute. Season with additional salt and pepper to taste.

                Garnish and Serve: Remove from heat and garnish with chopped fresh parsley. Serve immediately and enjoy your flavorful one-pot meal!
