One-Pot Creamy Taco Macaroni

1 lb ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

1 packet taco seasoning

2 cups elbow macaroni

4 cups chicken or vegetable broth

1 cup diced tomatoes (canned or fresh)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese

½ cup cream cheese

1 cup milk (or plant-based milk)

Salt and pepper to taste

Fresh cilantro or green onions, for garnish

Optional toppings: sliced jalapeños, sour cream, avocado

Instructions
 

Cook the Protein: In a large pot or Dutch oven, heat a splash of oil over medium heat. Add the ground beef (or turkey) and onion. Cook until browned, breaking it apart with a spoon, about 5-6 minutes. Add the minced garlic and sauté for another minute until fragrant.

    Season and Add Macaroni: Sprinkle the taco seasoning over the meat mixture and stir well to coat. Then, add the elbow macaroni to the pot, ensuring it gets mixed in with the meat.

      Add Liquids: Pour in the chicken or vegetable broth, diced tomatoes, black beans, and corn. Stir everything to combine.
