Ingredients

12 oz. spaghetti or linguine

4 cups vegetable broth

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Zest and juice of 2 lemons

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, roughly chopped

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan version)

Salt and pepper, to taste

Fresh basil leaves and lemon slices for garnish (optional)

Instructions

In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant (be careful not to burn the garlic).

Pour in the vegetable broth and bring it to a rolling boil. Stir in the spaghetti or linguine, ensuring it is submerged in the liquid. Cook according to package instructions, usually around 8-10 minutes, stirring occasionally.

As the pasta cooks, add the cherry tomatoes, lemon zest, and lemon juice to the pot. Continue to stir frequently and let the mixture simmer until the pasta is al dente and the broth has reduced, creating a light sauce.

Once cooked, remove the pot from heat. Stir in the chopped basil and grated Parmesan cheese. Season with salt and pepper to taste, adjusting the flavors as needed.

Serve hot, garnished with fresh basil leaves and lemon slices if desired. Enjoy your vibrant and refreshing meal!
