8 ounces of spaghetti or linguine

2 tablespoons olive oil

2 cloves garlic, minced

1 pound salmon fillets, skin removed

1 cup cherry tomatoes, halved

2 cups spinach leaves (fresh)

1 cup vegetable or chicken broth

1 tablespoon lemon juice

Zest of 1 lemon

Salt and pepper to taste

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Prepare Ingredients: Gather and measure all ingredients. Season the salmon fillets with salt and pepper on both sides.

    Sauté Garlic: In a large pot or deep skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

      Cook Salmon: Add the salmon fillets to the pot. Cook for about 3-4 minutes on each side until the salmon is golden and cooked through. Remove the salmon from the pot and set aside.
