1 lb (450g) ground beef

1 cup long-grain white rice

2 cups beef broth

1 large onion, diced

4 cloves garlic, minced

2 medium bell peppers (any color), diced

2 cups diced tomatoes (canned or fresh)

3 tablespoons sweet paprika

1 teaspoon smoked paprika (optional)

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

Fresh parsley, chopped for garnish

Optional: Sour cream for serving

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Brown the Beef: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the ground beef and cook until browned, breaking it up with a spatula as it cooks. Drain any excess fat.

      Sauté Vegetables: Add the diced onion and cook for about 3-4 minutes until they start to become translucent. Stir in the minced garlic and bell peppers, cooking for an additional 2-3 minutes until the peppers soften.

        Add Spices: Sprinkle the sweet paprika, smoked paprika (if using), oregano, salt, and black pepper over the mixture. Stir well to coat the meat and veggies with the spices.

          Combine Ingredients: Add the uncooked rice, diced tomatoes, and beef broth to the skillet. Stir everything together until well combined.

            Transfer to Baking Dish: Pour the beef and rice mixture into a greased 9x13 inch baking dish, spreading it out evenly.

              Cover and Bake: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 25 minutes.

                Uncover and Continue Baking: After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the rice is tender and the liquid has been absorbed.

                  Garnish and Serve: Remove from the oven and let it sit for 5 minutes. Garnish with fresh chopped parsley before serving. If desired, serve with sour cream on the side.
