1 large store-bought or homemade flatbread

1 cup fresh ricotta cheese

2 ripe peaches, sliced thin

2 tablespoons honey (plus extra for drizzling)

1 tablespoon fresh lemon juice

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 cup arugula or mixed greens

1 tablespoon olive oil

Salt and pepper to taste

Balsamic glaze (optional, for drizzling)

Prepare the Ricotta: In a small bowl, mix the ricotta cheese with honey, lemon juice, thyme, salt, and pepper. Adjust sweetness based on your preference by adding more or less honey.

    Grill the Flatbread: Preheat your grill or grill pan over medium-high heat. Once hot, place the flatbread on the grill. Cook for about 2-3 minutes on each side, until grill marks appear and it becomes crispy.

      Add Peaches: During the last minute of grilling, place the peach slices on top of the flatbread to warm them slightly.
