Peanut Butter Banana Oat Bars

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup creamy peanut butter

1/3 cup honey or maple syrup

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp salt

1/4 cup mini chocolate chips (optional)

1/4 cup chopped nuts (walnuts or almonds, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper for easy removal.

    Mix the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract. Stir well until the mixture is smooth and fully combined.

      Add Dry Ingredients: To the wet mixture, add the rolled oats, cinnamon, and salt. Mix until all the dry ingredients are incorporated. If you're adding chocolate chips or nuts, fold them into the mixture now.

        Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly. Press down firmly with a spatula or the back of a spoon to ensure it's compact.

          Bake: Place the dish in the preheated oven and bake for 20-25 minutes or until the edges are golden brown and the center is set.

            Cool and Slice: Once baked, remove the bars from the oven and let them cool in the pan for about 10 minutes. Then, lift the parchment paper to transfer the bars to a wire rack to cool completely. Once cooled, slice into squares or rectangles as desired.

              Store: Enjoy immediately or store the bars in an airtight container at room temperature for up to 3 days or refrigerate for a week.
