Peanut Butter Banana Oat Muffins

1 ½ cups rolled oats

1 cup whole wheat flour

1 ripe banana, mashed

½ cup natural peanut butter

½ cup honey or maple syrup

1 cup milk (dairy or non-dairy)

2 large eggs

1 tsp vanilla extract

1 tsp baking powder

½ tsp baking soda

½ tsp salt

½ tsp cinnamon (optional)

½ cup chopped nuts (walnuts or pecans) or chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

    Prepare Dry Ingredients: In a large bowl, mix together the rolled oats, whole wheat flour, baking powder, baking soda, salt, and cinnamon (if using). Stir until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the mashed banana, peanut butter, honey (or maple syrup), milk, eggs, and vanilla extract until smooth and well blended.

        Mix the Batter: Pour the wet ingredients into the dry ingredients and gently fold until just combined. If desired, fold in the chopped nuts or chocolate chips for added texture and flavor.

          Fill Muffin Tins: Spoon the batter evenly into the prepared muffin tin, filling each cup about ¾ full.

            Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of the muffins comes out clean.

              Cool Down: Once baked, remove the muffins from the oven and allow them to cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
