1 cup creamy or crunchy peanut butter

1 ripe banana, mashed

1 cup rolled oats

1/2 cup brown sugar or coconut sugar

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon baking soda

1/2 cup chocolate chips or chopped nuts (optional)

1/4 cup flaxseed meal or shredded coconut (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper for easy removal of the cookies.

    Mix Wet Ingredients: In a large bowl, combine the peanut butter, mashed banana, and vanilla extract. Stir until well combined and smooth.

      Combine Dry Ingredients: In a separate bowl, mix together the oats, brown sugar, salt, and baking soda. If using, you can add the flaxseed meal or shredded coconut here.
