Ingredients

2 large ripe bananas, mashed

1 cup rolled oats

1/2 cup creamy peanut butter

1/4 cup honey or maple syrup

1/2 cup chocolate chips (dark or milk, your choice)

1/4 cup chopped nuts (walnuts, almonds, or peanuts)

1 tsp vanilla extract

1/2 tsp cinnamon

A pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

Mash the Bananas: In a large mixing bowl, mash the ripe bananas with a fork until smooth.

Mix Wet Ingredients: Add the creamy peanut butter, honey (or maple syrup), and vanilla extract to the mashed bananas. Stir well until all the wet ingredients are thoroughly combined.

Combine Dry Ingredients: In another bowl, combine the rolled oats, cinnamon, and a pinch of salt. Mix well to distribute the cinnamon evenly.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in the chocolate chips and chopped nuts.

Spread in Pan: Pour the mixture into the prepared baking pan. Use a spatula or your hands to evenly spread the mixture across the pan.

Bake: Bake in the preheated oven for about 20-25 minutes, or until the edges are lightly browned and the center is set.

Cool and Cut: Remove from the oven and allow to cool in the pan for about 10 minutes. Use the parchment paper overhang to lift the bars out of the pan and cool on a wire rack completely before cutting into squares or bars.

Serve: Enjoy these delicious peanut butter chocolate banana oat bars as a snack, breakfast, or dessert! Store leftovers in an airtight container for up to a week.
