2 large eggs

½ cup unsweetened applesauce

½ cup whole milk

⅓ cup vegetable oil

1 teaspoon pure vanilla extract

2 medium-sized apples (peeled, cored, and diced)

½ cup chopped walnuts (optional)

1 tablespoon sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it with cooking spray to prevent sticking.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the eggs, applesauce, whole milk, vegetable oil, and vanilla extract until smooth and creamy.

        Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture together just until combined. Avoid over-mixing, as this will lead to dense muffins.

          Add Apples and Walnuts: Gently fold in the diced apples and chopped walnuts (if using) until evenly distributed in the batter.

            Prepare for Baking: Divide the batter equally among the prepared muffin cups, filling each about ⅔ full.

              Make Topping: In a small bowl, mix together the tablespoon of sugar and teaspoon of ground cinnamon. Sprinkle this mixture evenly over the muffin batter in each cup.

                Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.

                  Cool and Serve: Once baked, remove the muffins from the oven. Allow them to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely. Serve warm or store in an airtight container for later enjoyment.
