2 cups cooked chicken, shredded or diced

1/2 cup pesto sauce (store-bought or homemade)

4 large whole wheat tortillas or wraps

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

1 red bell pepper, thinly sliced

1 cup baby spinach or mixed salad greens

1/2 cup shredded mozzarella cheese

1 tbsp olive oil

Salt and pepper, to taste

Optional: Balsamic glaze for drizzling

Prepare the Chicken: If your chicken is not already cooked, season it with salt, pepper, and a drizzle of olive oil. Grill or pan-fry until cooked through. Allow to cool, then shred or dice.

    Mix Pesto: In a mixing bowl, combine the shredded chicken with the pesto sauce. Stir until the chicken is evenly coated. This will infuse flavor into the chicken, making every bite delicious.

      Prepare Vegetables: In a separate bowl, combine the cherry tomatoes, cucumber, red bell pepper, and baby spinach. Drizzle with a touch of olive oil and sprinkle with salt and pepper. Toss gently to mix.

        Assemble the Wraps: Lay a tortilla flat on a clean surface. Spoon generous amounts of the pesto chicken onto the center of the tortilla. Top with the mixed vegetables and a sprinkle of mozzarella cheese.

          Wrap It Up: Fold in the sides of the tortilla and then roll it from the bottom upwards to create a tight wrap. You can secure it with a toothpick or wrap it in parchment paper for easier handling.
