1 ½ cups graham cracker crumbs

½ cup granulated sugar

½ cup unsalted butter, melted

3 large eggs

½ cup sour cream

½ teaspoon lemon juice (optional for a zesty touch)

Preheat the Oven: Preheat your oven to 325°F (160°C). Grease a 9x13-inch baking pan with non-stick spray or line it with parchment paper for easy removal.

    Make the Crust: In a medium bowl, combine graham cracker crumbs, ½ cup sugar, melted butter, and vanilla extract. Mix until well combined and the mixture resembles wet sand. Press it evenly into the bottom of the prepared pan. Use a flat measuring cup or your hands to pack it down tightly.

      Pre-bake the Crust: Bake the crust in the preheated oven for about 10 minutes until it is lightly golden. Remove from the oven and let it cool slightly.

        Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes. Gradually add in 1 cup of sugar and continue mixing until well combined.

          Add Eggs and Flavorings: Add the vanilla extract and lemon juice (if using), then add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl to ensure everything is mixed thoroughly. Finally, mix in the sour cream until smooth.
