1 lb ribeye steak, thinly sliced

1 tablespoon olive oil

1 medium onion, diced

1 green bell pepper, diced

1 cup mushrooms, sliced

3 cloves garlic, minced

4 cups beef broth

1 cup heavy cream

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon black pepper

½ teaspoon salt (or to taste)

8 oz provolone cheese, shredded

Fresh parsley for garnish (optional)

Prepare the Steak: In a skillet over medium-high heat, add the olive oil. Once hot, add the thinly sliced ribeye steak. Sear for about 2-3 minutes until browned. Remove the meat from the skillet and set it aside, leaving any drippings in the pan.

    Sauté the Vegetables: In the same skillet, add diced onion, green bell pepper, and sliced mushrooms. Sauté until the onions are translucent and the mushrooms are tender, about 5-7 minutes. Add minced garlic and cook for an additional minute until fragrant.

      Combine Broth and Seasoning: Pour in the beef broth, stirring to combine. Add Worcestershire sauce, dried thyme, black pepper, and salt. Bring the mixture to a boil.

        Creamy Base: Reduce the heat to low and stir in the heavy cream. Allow the soup to simmer for about 10-15 minutes, giving the flavors a chance to meld together.

          Add the Steak Back: Return the seared steak to the pot and let it heat through for another 5 minutes.
