2 cups cooked chicken, shredded

1 cup fresh pineapple, chopped

1 bell pepper (any color), diced

1 small red onion, finely chopped

1/2 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon paprika

1 tablespoon soy sauce

Salt and pepper to taste

4 large flour tortillas or pocket bread

Fresh cilantro, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Mix Filling: In a large mixing bowl, combine the shredded chicken, chopped pineapple, diced bell pepper, red onion, mozzarella cheese, and cream cheese. Stir in the garlic powder, paprika, soy sauce, salt, and pepper until the mixture is well combined.

      Prepare Tortillas: Lay out one tortilla or pocket bread on a flat surface. Spoon a generous amount of the chicken filling onto the center of the tortilla.

        Fold Pockets: Carefully fold the sides of the tortilla over the filling and then roll it up from the bottom to form a pocket. Ensure that the filling is sealed inside. Repeat with the remaining tortillas and filling.

          Bake: Place the filled pockets seam-side down on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until the pockets are golden and crispy.

            Serve: Remove from the oven and let cool slightly. Garnish with fresh cilantro. Cut each pocket in half if desired and serve with your choice of dipping sauce (like sweet chili or a tangy salsa).
