2 tablespoons sugar

1/8 teaspoon baking powder

1/8 teaspoon baking soda

Pinch of salt

3 tablespoons milk

1 tablespoon vegetable oil

1/2 teaspoon vanilla extract

2 pineapple rings (canned or fresh)

1 tablespoon brown sugar

Maraschino cherry (optional, for garnish)

Prepare the Mug: Choose a microwave-safe mug (at least 12 oz.). Lightly grease the inside with a little vegetable oil or butter to prevent sticking.

    Make the Base: In a small bowl, mix together the flour, sugar, baking powder, baking soda, and salt. Stir until well combined.

      Add Wet Ingredients: Pour in the milk, vegetable oil, and vanilla extract into the dry mixture. Stir until you achieve a smooth batter, ensuring no dry flour spots remain.

        Prepare the Pineapple Layer: At the bottom of the greased mug, place the two pineapple rings flat. Sprinkle the brown sugar evenly over the pineapples to create a caramelized effect.

          Combine & Assemble: Gently spoon the cake batter over the pineapple layer. Don’t overfill—leave some space since it will rise during cooking.

            Microwave the Cake: Microwave on high for around 1 minute and 30 seconds. Cooking times may vary depending on the wattage of your microwave. The cake should rise and be set in the center. If it’s not done, continue to microwave in 10-second intervals until fully cooked.

              Serve: Allow the mug cake to cool for a minute before carefully inverting it onto a plate. The pineapples should be on top, surrounded by a delicious caramel glaze.

                Garnish: If desired, add a maraschino cherry on top for a finishing touch!
