2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

2 cups vegetable broth (or chicken broth)

1 teaspoon sugar (optional, to balance acidity)

Salt and pepper, to taste

1 cup fresh basil leaves, packed

½ cup heavy cream (optional for creaminess)

Grated Parmesan cheese for garnish (optional)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until soft and translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable (or chicken) broth. If you're using sugar, add it now to cut the acidity of the tomatoes. Stir well to combine.

      Simmer the Soup: Bring the mixture to a gentle simmer. Allow it to cook for about 15-20 minutes, stirring occasionally.

        Season to Taste: Once the soup has thickened slightly, season with salt and pepper to taste.

          Blend for Smoothness: Remove the soup from heat. If you prefer a smooth texture, use an immersion blender directly in the pot until creamy. Alternatively, you can ladle the soup into a blender and blend until smooth, then return to the pot.

            Incorporate Basil: Stir in the fresh basil leaves and heavy cream (if using). Allow the soup to simmer for another 5 minutes to let the flavors meld together.
