1 cup granulated sugar

1 large egg yolk

1 teaspoon vanilla extract

2 teaspoons almond extract

2 cups all-purpose flour

½ teaspoon baking powder

½ teaspoon salt

½ cup finely chopped almonds (for topping)

⅓ cup raspberry jam (or preserves)

Powdered sugar (for dusting, optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.

      Add Egg Yolk and Extracts: Beat in the egg yolk, vanilla extract, and almond extract until well combined.

        Mix the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
