Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

1/3 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

½ cup milk

1 cup fresh raspberries (or frozen, thawed)

½ cup white chocolate chips

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, baking powder, and salt until well combined.

Combine Wet Ingredients: In another bowl, mix the melted butter, egg, vanilla extract, and milk together until smooth.

Combine Wet and Dry Mixtures: Pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

Add Raspberries and Chocolate: Fold in the fresh raspberries and white chocolate chips gently, ensuring they are evenly distributed without breaking the raspberries.

Fill Muffin Cups: Using a spoon or ice cream scoop, fill each muffin cup about 2/3 full with the batter.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

Cool: Remove the muffins from the oven and allow them to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy your warm Raspberry White Chocolate Muffins as a delicious breakfast treat or snack!
