Roasted Acorn Squash with Maple Glaze

2 medium acorn squashes

4 tablespoons olive oil

1/4 cup pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/2 cup pecans, roughly chopped

Fresh rosemary for garnish (optional)

Instructions
 

Preheat Oven: Begin by preheating your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Squash: Cut the acorn squashes in half from stem to tip. Scoop out the seeds and stringy fibers from the center using a spoon.

      Make the Glaze: In a small bowl, whisk together the olive oil, maple syrup, ground cinnamon, nutmeg, sea salt, and black pepper until fully combined.

        Glaze the Squash: Brush the inside of each acorn squash half generously with the maple glaze mixture. Make sure to coat the inside well for maximum flavor.

          Roast the Squash: Place the glazed acorn squash halves cut-side down on the prepared baking sheet. Roast in the preheated oven for about 25 minutes.

            Add Pecans: After 25 minutes, remove the baking sheet from the oven. Carefully flip the squash halves so they face upward. Sprinkle the chopped pecans into the center of each half and drizzle any leftover maple glaze over the tops.

              Finish Roasting: Return the squash to the oven and roast for an additional 15-20 minutes, or until the squash is tender and caramelized around the edges.

                Garnish and Serve: Once done, remove the squash from the oven. Let them cool for a few minutes, then garnish with fresh rosemary, if desired. Serve warm as a delightful side dish or a vegetarian main course.
