1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon paprika (smoked or sweet, based on preference)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon ground cumin

½ teaspoon salt (adjust to taste)

¼ teaspoon cayenne pepper (optional, for heat)

1 tablespoon nutritional yeast (optional, for a cheesy flavor)

Fresh herbs (like parsley or cilantro) for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: After draining and rinsing the chickpeas, spread them out on a clean kitchen towel. Pat them dry gently with the towel to remove excess moisture – this step helps them get that crispy texture.

      Season: In a mixing bowl, combine the olive oil, paprika, garlic powder, onion powder, ground cumin, salt, cayenne pepper (if using), and nutritional yeast. Mix well until all the spices are evenly blended.

        Coat the Chickpeas: Add the dried chickpeas to the bowl with the seasoning mixture. Toss everything together until the chickpeas are thoroughly coated in the oil and spices.

          Roast: Spread the seasoned chickpeas on a parchment-lined baking sheet in a single layer. This ensures even roasting.

            Bake: Roast in the preheated oven for about 25 to 30 minutes, stirring halfway through, until the chickpeas are golden brown and crispy.

              Cool & Garnish: Once roasted, remove the chickpeas from the oven and let them cool slightly on the baking sheet. They will continue to get crisp as they cool. If desired, sprinkle fresh herbs over the top for additional flavor.

                Serve & Enjoy: Enjoy these chickpeas as a healthy snack on their own, or toss them into salads or grain bowls for added crunch!
