Ingredients
  

2 cups of uncooked pasta (your choice: fusilli, penne, or farfalle)

1 cup of fresh corn kernels (or frozen, then thawed)

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/2 cup bell pepper, diced (red or yellow for sweetness)

1/4 cup fresh cilantro, chopped

3 tablespoons olive oil

2 tablespoons lime juice (freshly squeezed)

1 teaspoon garlic powder

Salt and pepper to taste

Optional: crumbled feta cheese for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Corn: Spread the fresh corn kernels evenly on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with a pinch of salt and pepper. Roast in the oven for about 15-20 minutes or until the corn is golden and slightly charred, stirring halfway through for even roasting.

      Cook the Pasta: While the corn is roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

        Prepare the Dressing: In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lime juice, garlic powder, and a sprinkle of salt and pepper until combined.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta, roasted corn, diced avocado, cherry tomatoes, red onion, bell pepper, and cilantro.

            Toss and Serve: Pour the dressing over the pasta mixture and gently toss everything together until well coated. Be careful not to mash the avocado. Adjust seasoning with additional salt and pepper if needed.

              Chill (Optional): For best flavor, let the salad chill in the refrigerator for about 30 minutes before serving.
