Roasted Tomato and White Bean Toast

1 pint cherry tomatoes, halved

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

1 (15 oz) can of white beans (cannellini or great northern), drained and rinsed

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1/4 teaspoon red pepper flakes (optional for heat)

4 slices of rustic bread (such as sourdough or ciabatta)

Fresh basil leaves, for garnish

Balsamic glaze, for drizzling (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast Tomatoes: In a baking dish, combine the halved cherry tomatoes with olive oil. Season with salt and pepper. Toss well to coat the tomatoes. Spread them out in a single layer. Roast in the preheated oven for about 20-25 minutes, or until the tomatoes are soft and slightly blistered. Stir halfway through for even roasting.

      Prepare the White Beans: While the tomatoes are roasting, in a medium bowl, combine the drained white beans, minced garlic, lemon juice, thyme, and red pepper flakes. Mash lightly with a fork, leaving some beans whole for texture. Adjust seasoning with salt and pepper to taste.

        Toast the Bread: In the last 5 minutes of the tomato roasting time, place the slices of rustic bread on a baking sheet. Toast in the oven until golden and crispy, about 5-7 minutes.
