Roasted Tomato Feta Pasta Salad

2 cups cherry tomatoes, halved

1 cup feta cheese, crumbled

3 tablespoons olive oil

2 teaspoons dried oregano

Salt and pepper, to taste

12 ounces pasta (such as fusilli or penne)

1/2 cup fresh basil, chopped

1/4 cup red onion, finely diced

1 garlic clove, minced

1 tablespoon balsamic vinegar

1/4 teaspoon red pepper flakes (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    On a baking sheet, place the halved cherry tomatoes and crumble the feta cheese over the top. Drizzle 2 tablespoons of olive oil over the tomatoes and feta, and sprinkle with oregano, salt, and pepper.

      Roast in the preheated oven for approximately 20-25 minutes, or until the tomatoes are blistered and the feta is slightly golden.

        While the tomatoes and feta are roasting, cook the pasta according to the package instructions in a large pot of salted water. Drain and rinse under cold water to cool.

          In a large mixing bowl, combine the cooked pasta, roasted tomatoes and feta (including any juices from the baking sheet), fresh basil, red onion, minced garlic, balsamic vinegar, the remaining 1 tablespoon olive oil, and red pepper flakes if using. Toss gently until everything is well incorporated.

            Adjust seasoning with additional salt, pepper, or balsamic vinegar to taste.

              Allow the salad to sit for a few minutes to let the flavors meld before serving. It can be served warm or chilled.
