2 medium carrots, diced

2 celery stalks, diced

6 cups chicken broth

14.5 ounces diced tomatoes (canned)

9 ounces refrigerated cheese tortellini

2 cups fresh spinach (or kale)

Brown the Sausage: In a large pot or Dutch oven, over medium heat, crumble and cook the Italian sausage until browned (about 5-7 minutes). Use a slotted spoon to remove the sausage and set aside, leaving the drippings in the pot.

    Sauté the Vegetables: In the same pot, add diced onion, carrots, and celery. Sauté for 5-6 minutes until the vegetables are softened. Add minced garlic, and cook for an additional 1-2 minutes until fragrant.

      Add Spices: Sprinkle in the dried oregano, dried basil, and red pepper flakes (if using). Stir to combine and let the spices bloom for about a minute.

        Combine Ingredients: Return the cooked sausage back to the pot. Add the chicken broth and diced tomatoes (including their juices). Stir well to combine. Bring to a boil, then reduce the heat to a gentle simmer.

          Cook the Tortellini: Add the cheese tortellini to the simmering soup and cook for about 3-5 minutes, or as per package instructions, until the tortellini are tender.
