Savory Mushroom & Brie Toast Melts

8 oz fresh mushrooms (such as cremini or shiitake), sliced

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

4 slices of rustic bread (such as sourdough or ciabatta)

8 oz Brie cheese, sliced

¼ cup grated Parmesan cheese

1 tablespoon balsamic vinegar

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Mushrooms: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced mushrooms and cook, stirring occasionally, for about 5-7 minutes until they are browned and have released their moisture.

    Add Flavor: Stir in the minced garlic, thyme, salt, and pepper. Cook for an additional 1-2 minutes until the garlic is fragrant.

      Add Balsamic: Pour in the balsamic vinegar, stirring to combine. Let it cook for another minute until the liquid has mostly evaporated. Remove from heat and set aside.

        Toast the Bread: Preheat your oven to 400°F (200°C). Place the slices of bread on a baking sheet. Toast in the oven for 5-7 minutes until just crispy and golden.

          Assemble the Melts: Remove the toasted bread from the oven. Layer the sautéed mushroom mixture evenly on each slice, then top with slices of Brie cheese and a sprinkle of grated Parmesan for added flavor.
