1 pound Italian sausage (mild or spicy, your choice)

8 large eggs

2 cups whole milk

1 cup shredded cheddar cheese

2 cups cubed day-old bread (French or sourdough works best)

1 red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley or chives for garnish (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish or spray with non-stick cooking spray.

    Cook the Sausage: In a large skillet over medium heat, add the Italian sausage. Break it apart with a spatula and cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

      Sauté the Vegetables: To the same skillet, add the onion, garlic, and red bell pepper. Cook until softened, about 4-5 minutes. Remove from heat.

        Whisk the Eggs: In a large bowl, whisk together the eggs, whole milk, oregano, basil, salt, and pepper until well combined.

          Combine Ingredients: In the greased baking dish, layer the cubed bread evenly on the bottom. Pour the cooked sausage and vegetable mixture over the bread. Sprinkle the cheddar cheese on top. Finally, pour the egg mixture over everything, ensuring even coverage.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the casserole is puffed and a knife inserted in the center comes out clean.
