Savory Sweet Potato and Turkey Skillet

1 lb ground turkey

2 medium sweet potatoes, peeled and diced into small cubes

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup cherry tomatoes, halved

1 teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon dried oregano

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley or cilantro, for garnish

Optional: 1 avocado, sliced, for serving

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and a pinch of salt. Cook, stirring occasionally, for about 10 minutes or until they begin to soften and develop a slight golden color.

    Sauté the Aromatics: Push the sweet potatoes to one side of the skillet and add the remaining tablespoon of olive oil to the empty side. Add the chopped onion and bell pepper, sautéing for 3-4 minutes until they are soft. Stir in the minced garlic and cook for another minute until fragrant.

      Cook the Turkey: Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes. Season with smoked paprika, cumin, oregano, salt, and pepper.

        Add Tomatoes: Once the turkey is cooked, stir in the cherry tomatoes. Cook for an additional 2-3 minutes until the tomatoes soften and release their juices.

          Combine and Cook: Stir everything together to combine the flavors. If the mixture looks a bit dry, you can add a splash of water or chicken broth to help everything meld together. Cook for another 2-3 minutes until heated through.
