Savory Sweet Potato & Kale Breakfast Bake

2 large sweet potatoes, peeled and diced (about 4 cups)

1 cup chopped kale, stems removed

1 small onion, finely chopped

2 cloves garlic, minced

4 large eggs

1 cup milk (dairy or non-dairy)

1 cup shredded cheese (cheddar or your choice)

1 teaspoon smoked paprika

½ teaspoon sea salt

¼ teaspoon black pepper

1 tablespoon olive oil

½ teaspoon red pepper flakes (optional)

Fresh herbs for garnish (parsley or chives)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with cooking spray or olive oil.

    Prepare Sweet Potatoes: In a large bowl, combine the diced sweet potatoes with olive oil, smoked paprika, salt, and pepper. Spread them evenly on the bottom of the prepared baking dish. Bake in the preheated oven for 20 minutes until they start to soften.

      Sauté Vegetables: While the sweet potatoes are baking, heat a skillet over medium heat. Add a drizzle of olive oil, then sauté the chopped onion until translucent (about 3-4 minutes). Add garlic and kale, and cook for an additional 2-3 minutes until the kale has wilted. Remove from heat and set aside.

        Prepare Egg Mixture: In a mixing bowl, whisk together the eggs, milk, and red pepper flakes (if using). Season with a pinch of salt and pepper.

          Combine Ingredients: Once the sweet potatoes are done baking, remove the dish from the oven. Layer the sautéed kale and onion mixture over the sweet potatoes, followed by the shredded cheese.

            Pour Egg Mixture: Evenly pour the egg mixture over the entire dish, making sure it seeps into the layers.

              Bake: Return the baking dish to the oven and bake for an additional 30-35 minutes, or until the eggs are set and the top is slightly golden.
