4 large russet potatoes, thinly sliced

1 medium onion, finely chopped

3 cups heavy cream

2 cloves garlic, minced

1 teaspoon fresh thyme, chopped

1 teaspoon fresh rosemary, chopped

1 teaspoon salt

1 tablespoon Dijon mustard

2 cups sharp cheddar cheese, grated

1 cup Gruyère cheese, grated

2 tablespoons butter, for greasing

Preheat and Prepare: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter to prevent sticking.

    Prepare the Potatoes: Peel and thinly slice the russet potatoes using a mandoline or sharp knife, ensuring uniform thickness for even cooking. Set aside.

      Make the Cream Sauce: In a medium saucepan over medium heat, combine the heavy cream, minced garlic, chopped onion, fresh thyme, fresh rosemary, salt, pepper, and Dijon mustard. Stir frequently and bring to a gentle simmer. Allow it to cook for about 3-4 minutes until the mixture is fragrant.

        Layer the Dish: Begin layering the sliced potatoes in the greased baking dish. Start with a layer of potatoes, then pour a portion of the creamy mixture over them. Sprinkle a layer of cheddar and Gruyère cheese on top.
