1 lb ground chicken

2 tablespoons sesame oil

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (or tamari for gluten-free)

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sriracha (optional, for heat)

1 cup water chestnuts, chopped

1 cup green onions, finely sliced

1/4 cup cilantro, chopped (for garnish)

1 head of butter or romaine lettuce (for wrapping)

Sesame seeds (for garnish)

Instructions
 

Cook the Chicken: In a large skillet, heat the sesame oil over medium heat. Add the ground chicken and cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes.

    Add Aromatics: Stir in the minced garlic and grated ginger. Cook for another 1-2 minutes until fragrant.

      Create the Sauce: In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and sriracha. Pour this mixture over the cooked chicken in the skillet. Stir well to combine, allowing the flavors to meld for about 2-3 minutes.

        Incorporate Vegetables: Add the chopped water chestnuts and half of the sliced green onions to the skillet. Mix well and cook for an additional 2 minutes until heated through.

          Prepare the Lettuce Wraps: While the filling is cooking, carefully separate the lettuce leaves from the head. Rinse and dry them gently.
