Ingredients

1 pound large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Optional: 1 jalapeño, finely diced for heat

Instructions

Prepare the Shrimp: In a medium bowl, toss the peeled and deveined shrimp with olive oil, garlic powder, cumin, smoked paprika, salt, and pepper. Make sure the shrimp are well-coated with the seasonings.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the seasoned shrimp and cook for about 2-3 minutes on each side or until they are pink and opaque. Remove from heat and set aside to cool slightly.

Mix the Salad Ingredients: In a large mixing bowl, combine the diced avocados, cherry tomatoes, red onion, and cilantro. If you're using jalapeño, add that too.

Dress the Salad: Squeeze the lime juice over the salad mixture, tossing gently to combine. Be careful not to mash the avocados.

Combine The Shrimp And Salad: Once the shrimp have cooled, add them to the avocado mixture. Gently fold everything together to avoid smashing the avocado.

Taste and Adjust: Taste the salad and adjust the seasoning, adding more lime juice, salt, or pepper as needed.

Serve: Divide the salad into serving bowls or plates. Drizzle a little extra olive oil and garnish with additional cilantro if desired. Enjoy chilled or at room temperature!
