Shrimp Skewers with Pineapple Salsa

1 lb large shrimp, peeled and deveined

1/4 cup olive oil

2 tbsp honey

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper, to taste

1 medium pineapple, peeled, cored, and diced

1 red bell pepper, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (optional)

Juice of 1 lime

Fresh cilantro, for garnish

Instructions
 

Marinate the Shrimp: In a bowl, mix together olive oil, honey, minced garlic, smoked paprika, cayenne pepper, salt, and pepper. Add the shrimp, ensuring they are well-coated. Cover and marinate for at least 30 minutes in the refrigerator.

    Prepare the Pineapple Salsa: In a separate bowl, combine diced pineapple, red bell pepper, red onion, jalapeño, lime juice, and a pinch of salt. Gently toss to combine. Allow the salsa to sit for at least 15 minutes to let the flavors meld.

      Preheat the Grill: Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 20-30 minutes before grilling to prevent burning.

        Skewer the Shrimp: Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer, depending on size.

          Grill the Skewers: Place the shrimp skewers on the grill and cook for about 2-3 minutes per side, or until the shrimp turn pink and opaque. Be careful not to overcook!

            Serve & Garnish: Remove the skewers from the grill and serve immediately, topped with a generous scoop of pineapple salsa. Garnish with fresh cilantro for an extra pop of flavor and color.
