8 oz elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1/2 cup cream cheese, softened

4 strips of bacon, cooked and crumbled

1/4 cup unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Dijon mustard

Salt & pepper to taste

1/2 cup panko breadcrumbs

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to make a roux. Cook for about 2 minutes, whisking constantly until it’s light golden in color.

      Add Milk: Gradually add the whole milk, whisking continuously to prevent lumps. Bring the mixture to a simmer and cook until it thickens (about 5-7 minutes).

        Incorporate Cheese: Lower the heat and add the softened cream cheese, stirring until completely melted. Then, mix in the cheddar and Gruyère cheeses, a handful at a time, until fully melted and creamy. Add the garlic powder, onion powder, Dijon mustard, salt, and pepper, stirring to combine.

          Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce and stir well to ensure all the pasta is coated in the silky cheese mixture. Fold in the crumbled bacon.

            Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased 9x13-inch baking dish.

              Add Topping: In a small bowl, combine the panko breadcrumbs and olive oil. Sprinkle the breadcrumb mixture evenly over the mac and cheese.
