Slow Cooked Beef and Barley Stew

2 lbs chuck roast, cut into 1-inch cubes

1 cup pearl barley, rinsed

4 cups beef broth

1 cup diced carrots

1 cup diced celery

1 cup diced potatoes

1 cup yellow onion, diced

2 cloves garlic, minced

1 tablespoon tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Sear the Beef: Heat the olive oil in a large skillet over medium-high heat. Season the beef cubes with salt and pepper. Add them to the skillet in batches and sear until browned on all sides, approximately 3-4 minutes per side. Remove beef and set aside.

    Sauté the Vegetables: In the same skillet, add the diced onions, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften. Add minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients in Slow Cooker: In a slow cooker, add the seared beef, sautéed vegetables, potatoes, rinsed barley, beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf. Stir well to combine all ingredients.

        Season to Taste: Add salt and pepper to taste, keeping in mind that the broth may already bring some saltiness.

          Cook Low and Slow: Cover the slow cooker and cook on low for 8-10 hours, or on high for 4-6 hours, until the beef is tender and the barley has absorbed flavors.

            Final Touches: Once cooked, remove the bay leaf and adjust seasonings if necessary. If the stew is too thick, you can add a little more beef broth or water to reach your desired consistency.
