Slow Cooked Maple Apple Pork Chops

4 bone-in pork chops (about 1-inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, thinly sliced

2 garlic cloves, minced

2 cups apples, peeled, cored, and sliced (preferably Granny Smith or Honeycrisp)

1 cup apple cider

1/4 cup pure maple syrup

1 tablespoon Dijon mustard

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

Fresh thyme sprigs, for garnish (optional)

Instructions
 

Season the Pork Chops: Generously season both sides of the pork chops with salt and pepper.

    Sear the Chops: In a large skillet over medium-high heat, heat the olive oil. Once hot, add the pork chops and sear for 3-4 minutes on each side until golden brown. Remove the chops and set them aside.

      Sauté Onions and Garlic: In the same skillet, add the sliced onions. Sauté for about 3 minutes until they begin to soften. Add the minced garlic and sauté for another minute, until fragrant.

        Prepare the Slow Cooker: In the slow cooker, place the sautéed onions and garlic at the bottom. Arrange the sliced apples on top of the onions.

          Mix the Sauce: In a bowl, whisk together the apple cider, maple syrup, Dijon mustard, cinnamon, ginger, and nutmeg until well combined.

            Combine in Slow Cooker: Nestle the seared pork chops on top of the apples and onions in the slow cooker. Pour the apple cider mixture over the chops, ensuring they are well covered.

              Slow Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the pork is tender and fully cooked (internal temperature should reach 145°F).
