Slow Cooker Garlic Herb Pork Roast

3-4 lbs pork roast (shoulder or loin)

8 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional)

1 cup chicken broth

1/4 cup olive oil

2 tablespoons balsamic vinegar

1-2 cups carrots, cut into chunks

1-2 cups potatoes, quartered

Instructions
 

Prepare the Herb Mixture: In a small bowl, combine the minced garlic, rosemary, thyme, parsley, salt, pepper, onion powder, and red pepper flakes. Mix until well combined.

    Season the Pork: Pat the pork roast dry with paper towels. Rub the herb mixture all over the pork, ensuring an even coating.

      Sear the Pork (optional): In a large skillet over medium-high heat, add olive oil. Once hot, sear the pork roast on all sides until golden brown, about 3-4 minutes per side. This step adds depth of flavor but can be skipped if you're short on time.

        Prepare the Slow Cooker: Place the carrots and potatoes at the bottom of your slow cooker to create a bed for the roast.

          Add the Roast: Place the seasoned pork roast on top of the vegetables in the slow cooker.
