Ingredients

4 boneless pork chops (1 inch thick)

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 medium onion, sliced

Fresh parsley for garnish (optional)

Instructions

Prepare the Sauce: In a mixing bowl, whisk together honey, Dijon mustard, soy sauce, apple cider vinegar, minced garlic, dried thyme, paprika, salt, and pepper until well combined. This will create a deliciously sweet and tangy marinade.

Sear the Pork Chops (optional): Heat a skillet over medium-high heat. Add a bit of oil and sear the pork chops for about 2-3 minutes on each side until golden brown. This step is optional but adds depth of flavor.

Layer Ingredients in the Slow Cooker: Place the sliced onion at the bottom of the slow cooker. Lay the pork chops on top of the onions. Pour the honey mustard sauce over the pork chops, ensuring they are evenly coated.

Cook on Low: Cover the slow cooker and cook on low for 4-6 hours, or on high for 2-3 hours, until the pork chops are tender and cooked through (internal temperature should reach 145°F).

Serve: Once cooked, remove the pork chops and set aside. If desired, you can thicken the remaining sauce by transferring it to a saucepan and simmering it over medium heat until it reduces slightly.

Garnish and Enjoy: Serve the pork chops with sauce drizzled over them and garnish with fresh parsley. Pair with your favorite sides, such as mashed potatoes or steamed vegetables, for a complete meal.
