Smoky Harissa Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons harissa paste

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper, to taste

4 large whole wheat wraps or tortillas

1 cup fresh spinach or mixed greens

1 small cucumber, sliced

1 medium tomato, diced

½ red onion, thinly sliced

¼ cup tahini or yogurt, for drizzling

Lemon wedges, for serving

Instructions
 

Prepare the Chickpeas: In a mixing bowl, combine the drained chickpeas, harissa paste, olive oil, smoked paprika, cumin, salt, and pepper. Stir gently until the chickpeas are well-coated with the spices.

    Roast the Chickpeas: Preheat your oven to 400°F (200°C). Spread the spiced chickpeas on a parchment-lined baking sheet and roast for about 20-25 minutes, shaking the pan halfway through, until they are crispy and slightly caramelized.

      Prepare the Wraps: While the chickpeas are roasting, lay out the whole wheat wraps. Place a handful of fresh spinach or mixed greens in the center of each wrap.

        Add Veggies: Layer the sliced cucumber, diced tomato, and thinly sliced red onion on top of the greens evenly across each wrap.

          Add Chickpeas: Once the chickpeas are done roasting, remove them from the oven and let them cool slightly. Spoon the smoky harissa chickpeas generously onto each prepared wrap.

            Drizzle and Wrap: Drizzle your choice of tahini or yogurt on top of the chickpeas. Squeeze a little lemon juice over everything for extra brightness. Carefully fold in the sides of the wrap and then roll it up tightly from the bottom to form a wrap.
