2 cups all-purpose flour

1/2 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

1/3 cup brown sugar, packed

1 tablespoon ground cinnamon (for filling)

1/4 cup powdered sugar (for glaze)

1 tablespoon milk (for glaze)

Optional: Chopped nuts or raisins for filling

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and 1 teaspoon of ground cinnamon. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.

        Add Wet Ingredients: Beat in the egg and vanilla extract until well combined.

          Combine Mixtures: Gradually add the dry ingredients to the butter mixture, mixing until just combined. Do not overmix; a few lumps are okay.

            Prepare Filling: In a small bowl, mix the brown sugar and 1 tablespoon of ground cinnamon together. If using, also add chopped nuts or raisins to this mixture.

              Form Cookies: Scoop tablespoonfuls of dough and flatten them into circles on the prepared baking sheet. Sprinkle the brown sugar-cinnamon filling mixture onto each cookie, then fold the edges of the dough over the filling to form a sealed ball. Flatten gently again to shape.

                Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the cookies are lightly golden and set around the edges. They may look soft in the center, and that’s perfectly fine.

                  Prepare Glaze: While the cookies cool, whisk together the powdered sugar and milk in a small bowl until smooth.

                    Drizzle Glaze: Once the cookies have cooled slightly, drizzle the glaze over the tops of each cookie.
