Sour Cream and Onion Potato Casserole

2 pounds of russet potatoes, peeled and sliced thin

1 cup sour cream

1 cup onion soup mix (store-bought or homemade)

1 cup shredded cheddar cheese

1 medium onion, finely chopped

2 tablespoons butter

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

½ cup panko breadcrumbs

1 tablespoon olive oil

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the oven: Start by preheating your oven to 375°F (190°C).

    Prepare the potatoes: In a large pot, bring salted water to a boil. Add the sliced potatoes and cook for about 5-7 minutes, just until they soften slightly but are not fully cooked. Drain and let cool.

      Sauté the onion: While the potatoes are cooling, melt the butter in a skillet over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes. Remove from heat and set aside.

        Mix the sauce: In a large bowl, combine the sour cream, onion soup mix, garlic powder, salt, and black pepper. Stir well until everything is evenly mixed.

          Layer the casserole: In a greased 9x13 inch baking dish, spread half of the potato slices over the bottom. Spoon half of the sour cream mixture over the potatoes, then sprinkle half of the sautéed onions on top. Repeat the layers with the remaining potatoes, sour cream mixture, and onions.

            Add cheese: After the final layer of onions, sprinkle the shredded cheddar cheese evenly over the top.

              Prepare the breadcrumbs: In a small bowl, mix the panko breadcrumbs with olive oil until they are evenly coated. Sprinkle the breadcrumb mixture over the cheese layer.

                Bake the casserole: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is golden and the casserole is bubbling.

                  Garnish: Once out of the oven, let it sit for about 10 minutes. Before serving, sprinkle freshly chopped chives on top for an added burst of color and flavor.
