2 cups cooked chicken breast, shredded

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 red onion, thinly sliced

1 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper to taste

1 cup tortilla strips (for garnish)

1/2 cup Greek yogurt (for dressing)

2 tablespoons olive oil

Prep the Chicken: If you’re starting with raw chicken, season with salt, pepper, cumin, and chili powder. Grill or pan-sear over medium heat for 6-7 minutes on each side until cooked through. Let it cool, then shred.
