1 medium head of cauliflower, chopped into bite-sized florets

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

8 small corn tostada shells

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup crumbled blue cheese or vegan cheese alternative

1/4 cup sour cream or vegan sour cream

Fresh cilantro leaves for garnish

Lime wedges for serving

Instructions
 

Preheat Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Prepare Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.

      Bake Cauliflower: Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Bake in the preheated oven for about 20 minutes, or until golden and crispy, tossing halfway through.

        Add Buffalo Sauce: Once the cauliflower is done roasting, remove it from the oven and drizzle the buffalo sauce over the hot cauliflower. Toss gently until all florets are evenly coated.
