1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 tablespoon Cajun seasoning

½ teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

1 cup shredded lettuce

1 medium tomato, diced

½ avocado, sliced

¼ cup red onion, thinly sliced

4 large whole wheat or spinach tortillas

¼ cup spicy hummus (or your favorite spread)

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Chickpeas: In a medium bowl, combine the drained chickpeas with olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well until the chickpeas are evenly coated with the spices.

    Cook the Chickpeas: In a skillet over medium heat, add the spiced chickpeas. Sauté for about 5-7 minutes, stirring occasionally, until the chickpeas are heated through and slightly crispy on the outside.

      Prepare the Wraps: Lay out the tortillas on a clean surface. Spread a generous layer of spicy hummus on each tortilla, leaving about an inch of space around the edges.

        Assemble the Wraps: Start by adding a layer of shredded lettuce to each tortilla. Then, evenly distribute the sautéed chickpeas on top of the lettuce. Follow with diced tomatoes, avocado slices, and red onion.

          Wrap It Up: Carefully fold in the sides of each tortilla and then roll it tightly from the bottom to the top to create a secure wrap.
